Greek Lentil Salad

2 cups of dried Lentils
3 small onions chopped
3 cloves of garlic
6 carrots chopped
2 cans of artichoke hearts chopped
2 roasted sweet peppers chopped
4 plum tomatoes seeded and chopped
Juice of 1 lemon and 1 orange
1T of Italian seasoning
1/2t red pepper

Cook lentils until tender in a separate pot careful not to overcook. In a heavy pan soften onions and garlic with a small amount of water, then add artichoke hearts and seasoning. Add lentils and the rest of the ingredients, stirring until everything is well mixed. Season with red pepper and Braggs. Serve cold over a bed of lettuce.
