Quick and Healthy Side Dish
We all know how good cruciferous vegetables are for us. Here is simple recipe which is perfect for cool, winter evenings.
1 and 3/4 lb head of cauliflower
2 eggs, beatn
1 T. chopped fresh tarragon
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
Salt and freshly ground black pepper to taste
Preheat oven to 375 degrees. Trim off any leaves on the cauliflower. Trim the base of the core so that the head will stand upright. Set up the remaining ingredients so they are ready to use. Bring a large pot of water with a pinch of salt to a boil. Blanch the cauliflower in the boiling water for about 5 minutes. Place the cauliflower in a deep casserole and top with the remaing ingredients. Cover and bake for 15 minutes.
